Quick ‘n Healthy Summer Meal

Burritos. Tacos. Whatever you want to call them.

Make ’em however you want, but here is my rendition for a quick and simple way to incorporate good food choices and smiling faces for the entire fam:

Whole wheat tortillas

can of fat-free refried beans (the kind with NO lard!)

sharp cheddar cheese, shredded

chopped: cucumber, tomato, onions, lettuce, avocado

dab of sour cream & salsa

How to:

Lay tortilla on a microwavable plate, smear with beans, sprinkle with cheese and onion. Microwave for 30 seconds.

Top with chopped cucumber, tomato, avocado & lettuce.  Add a smidgen of sour cream & salsa. Fold. Eat.
